In the Kitchen CategoryThis course covers a little bite of everything you could think of! Decorate chocolate covered treats, cookies, cupcakes even cake decorating. You will learn the ins and outs of decorating any dessert to the T! Every week students take home their own decorated treats for friends and family to enjoy. Course fee includes supplies. Enrollment limited to 10. The focus of this class will be on regional American cuisine. Students will learn all aspects of food preparation such as sauteing, simmering, poaching, broiling and pan frying. The first part of the class will be dedicated to an overview of American cuisine and the second part of class will be hands-on cooking. Recipes will be reviewed and assigned to students in groups based on their cooking knowledge. Each group will include students who have some knowledge of cooking as well as those who are new to the kitchen. Each group will be assigned a different recipe identified with a specific region - Clam Chowder will be representative of New England, chilies and peppers with the American Southwest, etc. Groups will share their dishes with the class so that everyone will have a sampling of American cuisine. We will also discuss wines and suggestions for wine pairing. This class will spend half the time on regional American Cuisine and half the time on French Bistro Cuisine. The class will include both an overview of American cuisine and hands-on cooking. Recipes will be reviewed and assigned to students in groups based on their cooking knowledge. Each group will include students who have some knowledge of cooking as well as those who are new to the kitchen. We will also discuss wines and suggestions for wine pairing. We will also focus on various areas of France and their bistros, and the food also known as French Country Food. We will prepare food from Burgundy, the Loire, Bordeaux and Alsace. The ingredients used will be found in most supermarkets so that you can easily prepare these recipes from home. This class meets at 29 Walden Street, Concord, MA. Learn how to make some delicious and simple raw food appetizers, such as California Rolls, Thai Vegetable Wraps, Marinated Mushrooms and Quinoa Tabouli. Enjoy feasting on samples and get some great ideas for healthy and satisfying snacks for your next party. Additional $8 material fee payable to the instructor on the first night of class. With rolled fondant there´s no limit to the incredible decorations you can make for your cakes. These dough-like icings are easy to cut and shape to create breathtaking flowers and beautifully-textured drapes and borders. You´ll learn how to handle, cut and tint fondant, cover a cake and board with fondant, and even add effects such as ribbon garlands, rope borders, punched strips, inlays, and appliques. This class is hands-on and students will decorate and take home their own cake every week. Course fee includes supplies. Learn how to decorate your own birthday, shower and novelty cakes in four weeks. This class is hands-on and each student will decorate and take home their own cake. There will be cake demonstrations and briefing on basics of baking, icing and decorating cakes. Basket cakes, flower making and cake borders will be taught in this fun creative way of bringing out the best of your own work in this class. Fee includes materials. Learn how to make one of the most delicious desserts you will ever have using seeds, nuts, dried and fresh fruits as well as the superfoods such as raw cacao, maca, mesquite and more (certainly the most nutritious as well!). There is no need to include refined sugars and sweetners in your desserts once you learn these recipes which use only "real food certified organic or wild crafted ingredients". We will discuss the benefits of raw unprocessed cacao and other great superfoods such as the chia seed and how you can make the best desserts ever using them. These fast and easy recipes enable anyone to learn. Cost of food included in class fee. Enrollment limited to 12. This class will focus on various areas of France and their bistros. The food is also known as French Country Food. We will prepare food from Burgundy, the Loire, Bordeaux and Alsace. We will also produce food from well known chefs who either worked in these areas or are experts in this style of cuisine. Course fee includes materials. Enrollment limited to 12. Who doesn´t like baked goods! The only problem is that they are loaded with high concentrations of fat, sugar and calories. In this class you will learn how to make some of the most delicious dessert and baked goods without that much fat! All supplies are provided for, just show up and have fun baking away knowing you can eat every bite! This class is recommended for students who have completed the Basics of Fondant Class or have experience working with fondant. Students will learn how to free hand carve 3-dimensional cakes following the theme of the week. Students in the past have made storks, castles and cornucopias to name a few. You will learn how to mold people and animals and incorporate some basic piping. This class is hands on and the students will decorate and take home their own cake every week. Course fee includes supplies. Enrollment limited to 10. Chinese dishes are famous for their combination of tastes, aroma and color. This two session hands-on class is focused on learning cutting skills, preparing a variety of ingredients and incorporating them with basic Chinese cooking techniques. Students will participate in the whole cooking process. One evening we’ll prepare an appetizer, rice, vegetable, tofu and chicken. On the other evening, we’ll prepare soup, noodles, vegetable, seafood and beef. Cost of materials included in class fee. This is a great 2 part class that will provide you with a stable foundation for success in implementing powerful and sustainable food choices. We will take a science based approach to examine different food categories for nutritional components and compare them in terms of nutrient and caloric density. We will learn how to structure a full day of meals using the principals of a healthy raw vegan diet. In addition to an overview of whole and raw food ingredients and their health benefits, we will discuss and present recommended raw kitchen supplies and appliances as well as the various methods to soak and sprout seeds and nuts and turn them into delicious and nutritious entrees. You will leave this class with a notebook that includes lecture notes, recipes, and web and other resources that are essential to your success in incorporating raw vegan foods into your diet. This class includes lectures/instructional materials and 2 demos and tastings in each session. Take charge of your health and learn the practical and easy methods to having your own wheatgrass available throughout the year. This class will be lecture as well as hands on split into 2 weeks so we can grow, harvest, process and of course drink the wheatgrass. We will provide an in depth overview of the benefits of growing wheatgrass as a vibrant energy food in your own home. This will cover seed selection, growing equipment (trays, soils, etc), and juicing equipment as well as the history and nutritional benefits of this Superfood. We will plant the wheatgrass in week 1 and enjoy it with all its benefits in week 2. We use all certified organic practices and products with Randy Jacobs, Master Grower and Susan Allison, Certified Raw Food Chef. You can never have enough space when it comes to baking and dessert decorating. Now you have the chance to use the professional bakery equipment and the help of an instructor´s guidance for an evening. Please bring your own baking supplies such as flour, sugar, eggs, etc. to make that delicious cake or dessert from scratch as well as any specialty supplies needed to decorate your dessert. This class will guide you to perfection with the right equipment and assistance from Tara Bowman. Get your dessert done in half the amount of time it would take you from home, plus you can experience the real use of professional bakery equipment. Enjoy a night out with your child and learn how to decorate delicious treats that you and your child will just love! Now that you´re growing all those tomatoes, peppers, or other veges, learn a great way to preserve them using dehydration to maintain their maximum nutrition. Tastings throughout the class. Learn how to make fruit leather, how to dry and freeze herbs, as well as dry tomatoes for use in sauces, salsas, gazpacho and more. Make delicious pies and pie crusts with nuts and seeds and without lard, butter, or other fats. We will demonstrate how to make healthy "raw foods" using high speed blending, juicing, and dehydration techniques. $15 materials fee is payable to the instructor on the first night of class. This is an abbreviated and sped up version of Intro to Raw & Whole Foods that is scheduled in November. This hands-on class will focus on all you need to know about making, supporting, stacking tiered and transporting cakes. From the basics of pricing cakes to building a business will be discussed. Students will have the choice of decorating a wedding cake of their own design or from recommended choices. Students will decorate with fresh flowers, fondant, royal icing, anything imaginable to make the Wedding Cake of your dreams. Featuring 3 cake tiers -6", 9" & 12". Enrollment limited to 10. A 75% refund will be issued to students withdrawing prior to the second class and 50% prior to the third class.
